Orange Marmalade Cake

2 ¼ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

¼ cup poppy seeds

1/3 cup granulated sugar

1 stick (4 oz) butter or butter substitute

1 jar Orange Marmalade

1 cup milk

2 large eggs

Preheat oven to 350˚F. Butter and flour a one pound (5” x 9”) cake pan.

In a saucepan over medium-low heat, melt the butter and 1 cup of the marmalade. Set aside to cool slightly.

In a large bowl mix together the flour, sugar, baking powder, and poppy seeds. Make a well in the middle.

In another bowl, whisk together the milk, eggs, and vanilla. Pour into the bowl containing the dry ingredients. Add the melted butter and marmalade. Mix with a rubber scraper until just combined. The batter should be slightly lumpy.

Transfer to the prepared cake pan and bake in the pre-heated oven for approximately 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.

Cool in the pan for ten minutes, then turn out of the pan and continue cooling on a rack.

In a saucepan over very low heat warm ½ cup of the marmalade until it has liquefied. Brush or spoon this over the cooling cake.
