From my story “Ceremonial Duties”
Recipe adapted from Fante’s Pizzelle recipe.
2 cups flour
1 cup sugar
1/2 cup oil
2 tsp baking powder
1 tsp vanilla extract
In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sugar until the sugar has dissolved slightly, about two minutes.
Beat in the oil and vanilla.
Add flour and baking powder and beat on low just until mixture smoothes out a bit and can be dropped from a spoon. (For easier handling I made the dough a bit thicker so that it wouldn’t run out of the iron.)
If using an electric pizzelle iron follow manufacturer’s directions.
To bake on my stove top iron, I placed about a tablespoon of batter on the iron and baked over a low flame for about 40 seconds per side.
