Noodle Kugel

“Her Mother’s” kugel

From my story “Irene

½ a 12 ounce bag of egg noodles, fully cooked and drained

3 eggs plus one yolk

½ cup heavy cream

1 cup whole milk

2 tsp vanilla extract

2 tsp granulated sugar

The Topping

1 cup Matzo Farfel or finely crushed matzo

5 tbsp butter, softened

2 tsp granulated sugar

¼ tsp cinnamon

Prepare a 12 cup muffin tin by buttering thoroughly. Preheat the oven to 350˚F.

Fill each muffin cup with the cooked noodles.

In a large bowl, combine the eggs, cream, milk, vanilla extract, and 2 tsp of the granulated sugar. Beat with a wooden spoon or fork until combined and smooth.

Pour this custard over the cooked noodles, filling each cup with the custard mixture until approximately ¾ full.

Place the topping ingredients into a bowl and mash together with a fork until the matzo farfel is coated with butter and sugar. The mixture may clump together slightly.

Sprinkle a bit of the topping onto the top of each muffin cup.

Bake in the preheated oven for approximately 18 to 22 minutes or until the top of each kugel has browned slightly and the custard has set and a toothpick inserted into the middle comes out clean.

Cool in the pan briefly before removing the kugels from the pan.

Serve warm.
