Cornmeal Waffles

Cornmeal Waffles

This recipe is discussed in my story, ““M” is for the Many Moms Who’ll Read This”

Yield: approximately 16 4” x 4” waffles.

The Ingredients

1 ½ cups all purpose flour

½ cup yellow cornmeal

2 tsp baking powder

½ tsp baking soda

½ tsp salt

2 cups milk

6 tbsp canola oil

2 large eggs

2 large egg yolks

3 tbsp granulated sugar

1 tsp vanilla extract

pinch of cinnamon

pinch of nutmeg

The Process

Mix the flour, cornmeal, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.

In another bowl whisk together the milk, oil, eggs, egg yolks, sugar, and vanilla. Add this to the flour mixture, stirring until just combined. Some small lumps are okay, so don’t over mix.

Allow the batter to stand for five to ten minutes before baking in a waffle iron, approximately two to three minutes, until lightly browned. Be sure to consult the instructions published by the waffle irons’ manufacturer.
