From my story, “Pinkies Up!”
Makes about four dozen 2 ¾ inch cookies
Zest of four limes
Zest of one lemon
¼ cup mixed citrus juice (Juice of three limes plus juice of one half lemon)
1 ½ tsp vanilla extract
1 cup granulated sugar
1 ½ sticks (3/4 cup) butter or butter substitute, softened
2 cups all purpose flour
½ tsp baking powder
¼ tsp kosher salt
Confectioner’s sugar for dusting
Place the sugar and citrus zest into the bowl of a stand mixer fitted with the paddle attachment and beat on medium low until the zest is distributed into the sugar, about a minute.
Stop the mixer and add the butter. Mix on medium until the butter and lightened in color and become fluffy. Add the vanilla extract, and continue beating briefly until combined.
Stop the mixer and scrape down the sides of the bowl. Add the flour, baking powder, and salt, and beat on low just until the dry ingredients have absorbed into the butter and the dough has become smooth, about a minute and a half.
Dump the dough onto a floured board and divide in half.
If you intend to roll and cut the cookies, then handling the dough lightly, shape the two halves into flat discs. Wrap the discs tightly in plastic wrap and freeze until firm, about 30 minutes. (If freezing overnight, thaw the dough for about a half hour to forty-five minutes before proceeding.)
If you intend to slice and bake the cookies, then roll the two halves into logs about 2 ½ to 3 inches in diameter. Wrap securely in parchment paper and plastic wrap and freeze until ready to use.
Roll or slice the dough into 1/8” cookies and place on parchment lined cookie sheets. Bake on the top rack of a pre-heated 350˚F oven, one sheet at a time for approximately 8 minutes, or until the edges of the cookies have just barely begun to brown.
Dust generously with confectioner’s sugar immediately after removing from oven. Place on cooling racks until thoroughly cooled. If necessary, re-dust the cookies with confectioner’s sugar before serving.
