After School Apple Snack Cake

From my story, “Law & Order: After School Special

The Ingredients

¼ cup vegetable oil

¾ cup granulated sugar

1 egg

¾ cup all purpose flour

¾ tsp baking powder

½ tsp baking soda

¼ tsp kosher salt

1 tsp vanilla extract

½ cup plain 2% Greek yogurt

1 tsp grated lemon zest

The Process

Preheat your oven to 350˚F and prepare an 8” x 8” square cake pan by thoroughly greasing and lining with parchment.

In the bowl of a stand mixer fitted with the paddle attachment, beat together the sugar, oil, and lemon zest until slushy, approximately 2 minutes.

Add the egg, and with the mixer on medium high beat until smooth.

Stop the mixer, and add the vanilla, and yogurt. Beat on high speed until the ingredients are combined and smooth.

Sift in the flour, baking soda, baking powder, and salt. Combine on the lowest speed just until combined.

Pour the batter into the prepared pan. Bake in the pre-heated oven for approximately 20 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool before topping with cooked apples (below.)

Easy version: line up slices of two uncooked apples on the top of the unbaked batter. Sprinkle generously with sugar, and bake for 25 to 30 minutes. Skip the steps below.

Cooked Apples

The Ingredients

3 Granny Smith Apples, peeled, sliced, and cored

1 tbsp Canola Oil

1 tsp frozen concentrated orange juice

1 tsp grated lemon zest

1/8 tsp cinnamon

Combine all ingredients in a sauté pan and cook until the apples are softened and cooked through.

When both cake and apples have cooled assemble by lining up the cooked apples in rows on top of the cake.
